Recently we stopped by a local restaurant downtown. We had the pleasure of meeting Jay Krecklow, owner of the Radici Restaurant. We were able to ask him some questions about his fine establishment, sample some delicious dishes, and take some photos of the whole experience.
It's great meeting you Jay, thanks for having us. We've heard great things about Radici. Please tell us a bit about it.
Radici is Portsmouth's local Italian bistro. The food is fine dining quality however the atmosphere is warm, inviting & comfortable. You can just stop in for a quick bite to eat or go out for a big celebration, birthday, or anniversary. We offer many 1/2 size portions so the price range is anywhere from 12-25 dollars. Our average meal is around $18.
When ordering an appetizer, we expected an ordinary dish to hold us over until the main meal arrived, but after trying the Seared Sea Scallops, we died and went to heaven. What makes this dish so wonderful?
It's fresh, fresh, fresh. We get all our seafood products delivered daily. This dish is simple & delicious. Basically, 3 sea scallops, pan seared to perfection, topped with a sun dried tomato aioli served on a slice of tomato. Rounded out with some slightly sauteed baby spinach.
After the first course we knew the main meal would be fantastic, and it was! When mentioning Radici to locals this next meal was highly recommended. The Osso Buco was an excellent blend of tastes and flavors and it made us want to savor it and devour it all at the same time. Give us some insight on how you have perfected this meal?
This is one of our most popular & long lasting menu items (we switch up the menu seasonally, however there are some items we leave on year round ie. osso buco) This is a slow cooked braised veal shank served over a mushroom risotto & house vegetable. The dish is finished with a rich demi-glace. This veal demi-glace is the key to the dish. The veal stock is cooked down over a 24 hour time period to really get all the flavors to come out.
Portsmouth is such a close-knit community, and restaurants such as yours make up a huge part of that. Please discuss the importance of being an independent locally owned business.
I love being an independent business owner. My staff makes my restaurant, we are all family. Fresh & affordable is my way of thinking. Giving the diner the best possible food, drink, service & atmosphere possible. We want to give the customer the best overall dining experience.
